Mutton Donne Biryani

Our home traditional Donne biryani. Mutton cooked in woody Indian spices along with fluffy and flavorful jeera samba rice/basmati rice.

Preparation and cooking time:1 and 1/2 hr

Serving: 4

Ingredients:

  • 1/2 kg Jeera samba/Basmati rice
  • 1/2 kg mutton
  • 1 small onion(cut into vertical pieces)
  • 1 cup mint leaves
  • 1 cup chopped coriander leaves
  • 1/2 lime/ lemon juice (optional)
  • 1/2 tsp turmeric powder
  • Ginger (ginger shud be half the qty of garlic)
  • 2 small garlic
  • 8 to 12 spicy green chilli

Biryani masala:

  • 1 small piece Cinnamon
  • 10 Cloves
  • 5 Cardamom
  • 4 Star seed
  • 1/2 tsp Dagad phool
  • 1/2 tsp Fennel seed
  • 5 Bay leaves
  • 5 Marathi moggu(dried kapok buds)
  • 1/2 tsp Kasturi methi
  • Salt as needed

Preparation and cooking method:

Soak the rice in water for 10 to 15mins

Wash mutton in clean water.

Grind ginger, garlic, green chilli, 4 to 5 cloves, small piece cinnamon into a paste.

Heat oil in a cooker.

Add Biryani masala (specified in ingredients list) along onions, mint leaves, saute for awhile.

Then add masala paste, and saute 5 to 10 mins.

Add mutton, turmeric powder and salt, mix well and fry for another 10 minutes or untill water released from mutton evaporates completely.

Now add lime/ lemon juice(optional) and Add 2 and 1/2 glasses of water and Pressure cook mutton upto 1 or 2 whistles.

Turn off heat and wait untill cooker cool down.

Later add soaked jeera samba/basmati rice and coriander leaves.

Pressure cook upto 1 whistles and turn off heat.

Once pressure is off then remove lid, mix gently. Garnish with coriander leaves.

Serve hot biryani with onion cucumber raita 🙂
